Here is my quick and easy chicken recipe that can be made in just 12 minutes.
This is an ideal recipe if you are going out and have little time to prepare a meal.
It is also a light meal and is easy to digest.
Ingredients
- 1 hand full of Basmati Rice per person
- Couple of florets of broccoli per person
- 1 Pepper per person
- Chicken breast – approx 1 ½ breasts per person
- Sweet chilli sauce or other favourite sauce
- Soya sauce
- Vegetable Bouillon to taste
For this recipe, you will need a George Forman grilling machine.
Method
- Wash the basmati rice in a saucepan and drain off the starchy water
- Add fresh water to the rice and cover by approximately the width of one finger.
- Add a teaspoon of vegetable Bouillon to the rice per person and stir in.
- Add the florets of broccoli on top of the rice and bring the water to a boil and simmer for 12 minutes.
- In the meantime, turn on the George Foreman grilling machine.
- Dice the chicken breast into approximately 1 inch chunks, slice the pepper and combine with a little olive oil.
- When the rice has just 7 minutes left to cook, add the chicken breast pieces and pepper to the George Foreman grill – this should be about the ideal cooking time for the chicken.
- When the 12 minutes is up, drain the rice and broccoli and add to a plate.
- Add the cooked chicken pieces to the plate with the rice.
- Take some sweet chilli sauce and drizzle onto the chicken and rice.
- Drizzle some soya sauce onto the chicken and rice.
Serve immediately – Enjoy!
Note – personally, I prefer to leave the rice in the pan once it has been cooked and drained for a couple of minutes without a lid on the pan. This helps the rice to dry a little.
