Just thought I’d share this summer dessert recipe with you.
Well it’s not actually a recipe, more of a combination, but it tastes great and it’s really easy to make.
First of all get some whipping cream and put it into a food blender until it thickens up.
- Ignore the method of whipping the cream in a blender above – I take it back! The best way to whip cream is to pour the double cream into a bowl or saucepan, then take a wire whisk and manually whip it by hand. It may take longer and be quite manually demanding, but the end result is well worth it.
- Once the cream has reached the right consistency, put it into the fridge until you’ve completed the next steps.
- Take some fresh strawberries and dice them up into approximately eight pieces ie chop each half into four.
- Next take some meringue swirls, which you should be able to find in your local supermarket and crumble them up into a bowl or saucepan – see photos.
- Add the whipped cream and chopped strawberries and stir together loosely.
- Spoon the mixture into a glass or bowl and serve.
You can add some garnish, such as mint leaves etc.
This is a simple recipe, but it tastes great on a hot summer day.
